2 Cakes Due While Moving

Wow...Last weekend was such a busy weekend for me. I had two cakes due back to back while moving into a new house. I didn't think I can get it all done! I started stressing out about everything. How am I going to get these two cakes done? I don't want the cake to turn out bad. How am I going to do each character for the Chuggington Train cake? What am I going to do with the Dinosaur cake? How will I be able to work on the cakes while all my tools were packed in a box somewhere? How am I going to get things packed up, moved, and then unpack? So as all these thoughts and worries keeps popping up in my head, I started getting nervous. Aaahhh!!! What am I going to do?!?!

But then I stopped myself and said a little prayer to the Lord. I ask Him for guidance on how I'm suppose to go about with everything. I ask Him how will I create the two cakes. He answered and said to me...Child, I got it all figured out. All you have to do is follow My lead and relax. Well, I did just that!!! I finished my two cakes and had the best time creating each little details!!!  He was there with me the whole time telling me what to do. While I was doing my cakes, my husband and kids were at our other house trying to clear things up.

It's just amazes me every time to see the Lord work His miracles. Even the little ones too! Everything turned out great. I was blessed beyond words on how each cake turned out. Below are my two cakes. Hope you enjoy seeing them, because I enjoyed creating them. Of course, it's worked out because of the Lord. Praise God!!! :-)

As me and my family got ready to deliver the Dinosaur cake, the enemy came in to play. I got in the car and my husband told me we needed gas. I was like, "...umm, okay. Can we get it after we drop of the cake?" He told me we'll do just that. But as we started driving, the gas indicator on our car screen started dropping. Each time I look at the number, it would drop a few more. Then my heart started racing when it said 12 miles to empty and we had a few more miles to go. I'm thinking we could probably make it and get gas afterwards. So I kept my eyes on the screen. But for some reason it was dropping so fast I couldn't seem to breathe. I closed my eyes and said a prayer! Thank the Lord that we have a gas station coming up before our destination. My husband and I both agree that we needed to stop and get gas before dropping the cake off. It's fine to be a few minutes late than not make it at all. The Lord had it all taken care of. We got gas and made it on time to deliver the cake and cupcakes! Whew!!!!

The next day, my Chuggington Train cake was due! And again, the enemy came in to play. Living here in Vegas is a challenge for many people. It was a challenge for me this day. As we got into the car and started driving, I looked down at the cake and was confused. I was wondering why did the cake look kind of weird. Then I realize that the chocolate letters of "Happy 4th" and the "C, L, and E" on Chloe was melting!!! I started freaking out and told my husband to turned around. He was wondering why and I told him that the letters were melting!!! So as he turned the car around, my heart was beating so fast. Oh my goodness, oh my goodness, oh my goodness. What am I going to do?!?! Once again, I went to the Lord. Only He can figure this out. 

We went back home and I started making more chocolate letters. My husband told me in a calm voice to just get a hold of Tamara and tell her you'll be a few minutes late. Or we can just deliver it to them at the place of the party. So I did. Tamara was kind enough to tell me not to worry. Thank you, Tamara! :-) 

So, once all my letters were all ready, we headed back out. I decided to sit in the way back of our SUV with the cake to stay away from the sun. We drove over the Pump it Up and guess what? We made it on time. They were just getting their room. Aahh! The Lord is awesome!!

This picture of Chloe playing with her favorite Chuggington Train made my day. I had the biggest smile on my face and shared it with my husband. It was such a blessing when Tamara (Chloe's Mom) sent me this photo. I couldn't wait to share it with others!!! She is such a darling. This is the best payoff! When you share God's love with others, you will get love back in return!!! :-) 

All the stress I went through was all worth it! The look on both of the kids face was priceless!!! I love my job. What a blessing!!! :-)

The Hulk Cake

I'm learning something new every time I decorate a cake. This time was working with edible prints. They are very fragile when you start working with them. Note to anyone who want to experience edible prints. Try your best not to peel and reposition your prints after gluing it on with edible glue. They will come apart! Aaaahhh!!! Lesson learned...Lol :-) The Lord is always teaching me something new. I love it! <3

Happy birthday to a very special little boy name Angelo who is 4 today!!! He is the cutest and bravest little guy. He broke his arm a few days before his birthday. His mom, Ilana, told me he was so brave! He ask the doctor for a green cast because he love The Hulk so much. He had the biggest smile on his face while showing his green cast in a picture!!!

So this cake was special for him. It made my day when I delivered the cake. While I ask him if he liked his cake, I saw the biggest and brightest smile on his face as he nodded his head. It was the cutest thing! I thank the Lord for this cake. If He didn't blessed me with decorating this cake, I would've miss that smiling face! Thank you, Ilana for asking me to make Angelo's day more sweeter. :-) So sorry we couldn't stay for the bowling party. My kids would've love celebrating it with him. We'll set a play date for sure!!! :-)

Summer Mini Fruit Tart

Easy Summer Mini Fruit Tart with Graham Cracker Crust


Since it's so hot here in Las Vegas, Nevada. I was thinking of something easy and yummy to make. So I came up with mini graham cracker fruit tart with fresh fruit. It's so simple and easy to make. You don't need much ingredients to make these. You can also get your kids involve. My kids love to help me make this and also eating them. They kept asking for more. Lol :-) It's also great for parties and get together. I'm thinking of making these again for Kairi's birthday party since she likes them so much.

Ingredients
~Crusts~
1 1/2 cup of crushed graham crackers crumbs (For Gluten Free Diet use Kinnikinnick Gluten Free Smoreables Graham Crackers)
2 Tbsp. of light brown sugar 
6 Tbsp. of unsalted butter, melted

~Filling~
1 pint of heavy whipping cream
2-4 Tbsp. of powdered sugar
1 Tsp. of pure vanilla extract
Fresh berries- I only used Raspberry and blueberries. 
White chocolate for garnish ( Hershey's are always yummy)

Preheat the oven to 375 degree. In a gallon ziplock bag, put in graham crackers and using rolling pin to crush it. Make sure it's finely crushed. You might have to help them mom and/or dad. Or if you don't have much time, you can always use a Cuisinart.

Time to mix

 

 

 

In a medium or large bowl, mix graham crackers and light brown sugar. Make sure it's well blended.

Add the melted butter

Slowly add in the butter and mix well until there's no dry graham cracker crumbs. Again, parents, you might have to step in and help.
 Line the cupcake pan with cupcake liners. 
 Spoon in graham crackers into the cupcake liners. About halfway full.

Press down hard on all the crumbs to the bottom of the liners with your fingers. Then use a small roller to press down the middle to make it look like a little bowl. Once done, place it into the oven for 8 to 10 minutes or until the top crust is golden brown. Take it out of the oven and let it rest on your stove rack for a few minutes. When that's cooled off, take the crust out of the cupcake liners one at a time by using both hands to push open the liners. Place the crusts on a flat plate and put it into the fridge for about 10 minutes. 

While the crust is cooling off. In a mixing bowl ( I use my KitchenAid ) add together heavy whipping cream, 2 tablespoon of powdered sugar ( add more for sweeter, I only add 2 tbsp. because I don't mind it not being so sweet ), and 1 teaspoon of vanilla extract. Mix well until it form a stiff peak. 

Take the crust out and using a spoon or piping bag, place the whipped cream on top of the crust. Add fresh berries and garnish it with white chocolate. I used a peeler to sliced the white chocolate for garnishing. 


Voila! You now have your mini fruit tart and it's ready to be enjoyed with family and friends. You can complement it with a nice cup of lemonade or orange juice! Have fun with it

New to Blogging and Nervous

Lol... For some weird reason I am so nervous to start this blog. Maybe it's because I have no idea what I'm doing...yet! I'm also excited to start learning how to become a blogger. Woo-hoo!!!

As I start my journey as a blogger, I thank God, for all He's done. Wow!!! He sure keep opening doors for me. Surprising me every time I open my eyes. Of course, sometimes I'm not even ready. He would catch me off guard. But hey, what He tells you to do, you better do it. Lol :)

 I will instruct you and teach you in the way you should go; I will guide you with My eye. (Psalm 32:8) The Lord knows what He's doing. The best thing for me to do is take the back seat while He lead.

So here I am people! Starting a post to let everyone know my journey with the Lord. Without Him, nothing is possible. I wouldn't be where I am today. I never would have thought that I can make all these beautiful cakes. I'm so thankful for this gift He has blessed me with. I grew so much in my learning as a cake decorator. But most of all, I grew in my relationship with the Lord. He's there with me during every cakes I made. It's more like He's the baker and decorator while I'm His assistant. Without Him every step of the way, I would not know what I'm doing at all and that's the honest truth. With every new cakes I create, He never cease to amaze me. I'm in awe with every creations He comes up with!

I am so in love with what I do. Every time I get an order, I get so excited that my mind would run a thousand miles a minute. I start thinking of all the things that would make this one cake special. I have the best time when they give me a free reign on what to come up with. It is so much fun!!!

Before I end my first post, I would like to say 'Thank you' for taking your time and visiting my blog. I pray that you will continue to visit here and see what else the Lord has come up with. As of right now, I have three cakes I'm working on. The first cake is The Hulk for a very special and cute little guy name Angelo! He is such a darling. My second is a Dinosaur theme and third is a Disney Chuggington Train theme. I am so excited to get started on all these cakes. Once again the Lord keeps on going!!! <3
